What is Green Chili?

The most simplistic explanation is that Green Chili is a spicy pork stew. But, truly it is more than that; it is the heart of Colorado tradition, and culinary culture.

The recipe comes from a blending of Spanish, Mexican, and Italin heritage in Southern Colorado. When Italian migrants came to Pueblo in the early 20th century to mine coal. They saw their Hispanic neighbors eating chilies and they would take the ingredients, all of the flavors and all these cultures and combined them together.

Colorado and New Mexico both claim the rights to the regional dish. Truth is it is distinctly both. The two states use different chilies to distinguish a New Mexico Green Chili, from a Colorado one. Here in Colorado we use the spicier Pueblo Chili, while in New Mexico it is their fames Hatch chilies.

No matter the variety it is excellent on burgers, fries, or just on it’s own with a flour tortilla. But in my opinion there is no better way then smothering a chicken burrito with the works.
